    1. Toast the crumpets under the grill or in a toaster.
    2. Meanwhile, poach the eggs in gently simmering water for 3-4 minutes, or until done to your liking.
    3. Place the crumpets onto two warmed plates. Share the smoked salmon between them, then top each one with a poached egg.
    4. Serve sprinkled with black pepper.
