    You will need

    4 Warburtons Gluten Free Fruity Buns

    250g mixed berries (any combo of raspberries, strawberries, blackberries, blueberries and redcurrants all work well)

    1-2 tbs caster sugar

    2 scoops vanilla ice cream

    1)   Wash the berries then tip them into a saucepan (don’t bother drying them). Simmer gently for 3-4 minutes until starting to soften and they release some juices

    2)   Add the sugar to the berries and cook for another few minutes. The fruit should be soft but not completely broken down. Taste and add a touch more sugar if needed (be careful as it will be very hot) then set aside

    3)   Split the buns and toast lightly on both sides, then stack them up and top each pile with a scoop of vanilla ice cream and a generous spoonful of the berry compote
