    You will need

    4 slices Warburtons Gluten Free Tiger Bloomer

    3 ripe tomatoes (a mix of types is nice)

    1 ball mozzarella, drained and thinly sliced

    1 tbs fresh pesto

    2 tsp toasted pine nuts

    Few fresh basil leaves

    Black pepper

    1)   Lightly toast or griddle the slices of Tiger bread then pop 2 slices onto each plate

    2)   Arrange the sliced tomatoes and mozzarella over the toast then drizzle on the pesto (you can stir in a dash more olive oil if you like). Scatter over the pine nuts and basil leaves and finish with a grind of black pepper
