You will need
For the soup and croutons:
- 2 slices of Warburtons 800g Farmhouse Loaf
- 1 red onion
- 1 red pepper
- 600g vine tomatoes
- Few garlic cloves, peeled
- Tsp dried basil
- Salt and pepper
- 30g salted butter, melted
- 20ml olive oil
- Finely grated parmesan
- Balsamic vinegar, to serve
- Double cream, to serve
- Basil leaves, to serve
For the cheese toastie:
- 4 slices of Warburtons 800g Farmhouse Loaf
- Butter
- Mayonnaise
- Emmental cheese
- Cheddar cheese

To make the soup:
🍅 Take a red onion, a red pepper, and 600g of ripe vine tomatoes, and give them a proper chop.
🔥 Pop your veggies into the Air Fryer with a few peeled garlic cloves, a teaspoon of dried basil, and a bit of salt and pepper. Cook on 200c for 15 minutes, with a good shake halfway through.
🍞 Whilst that cooks, grab 2 slices of your Farmhouse loaf and chop into little cubes.
🧈 Pop them in a bowl with 30g of melted salted butter, 20ml of olive oil, and a nice pinch of finely grated parmesan, toss them about a bit, then cook them in the second Air Fryer drawer in a single layer for about 10 minutes until nice and crispy, then put them to one side.
🌪️ In a blender, add your veggies with 400ml of boiling water and a couple of veg stock cubes and whizz until smooth.
🥣 Serve your soup with a nice swirl of balsamic, a drizzle of cream, a few fresh basil leaves, your crispy croutons, and a toastie on the side.
To make your toastie:
🧡 Spread 4 slices of your Farmhouse loaf with butter on one side and mayo on the other.
🧀 Put a slice of Emmental and cheddar on the mayo side of the slices and sandwich together for a cheese-filled sarnie.
⏲️ Pop them in the Air Fryer and cook for 5 minutes on each side, then serve with your soup!
