You will need
- 2 x packs 3 x 4 mini pancakes
- 400g fresh strawberries
- 70g soft cheese
- 70ml double cream
- ½ tsp vanilla essence
- 5ml lemon juice
- 10g icing sugar – with extra for dusting

- First make the strawberry sauce
- Put 150g strawberries into a small liquidiser along with the lemon juice and 5g icing sugar – whizz to a thick sauce
- Put the cream, soft cheese, remaining icing sugar and the vanilla essence in a bowl and whisk till thick
- Wipe and finely chop 150g strawberries – add this to the cream cheese mix and stir through
- Serve the pancakes sandwiched with the strawberry cream cheese alongside the strawberry sauce to dip and the remaining whole strawberries
