    You will need

    4 Warburtons Crumpets

    1tsp light olive or vegetable oil

    ½ onion, sliced

    10 cherry tomatoes, halved

    10 chestnut mushrooms, halved or quartered

    2-3 tbs tinned beans in water, rinsed (such as haricot, cannellini or borlotti beans)

    2tbs water

    few sprigs flat leaf parsley, chopped

    1. Heat the oil in a frying pan and add the onions, tomatoes and mushrooms. Fry for 3-4 minutes until golden then add the beans and turn down the heat. Cook until the beans are heated through, stirring frequently. Stir through the chopped parsley
    2. Meanwhile, toast the crumpets on both sides. Pile the vegetables on top of the crumpets and serve.
