    Make it

    | Serves 2

    1)  Lightly butter one side of each slice of bread. Lay two slices, butter side down onto a board and top with the sliced cheese, then the pastrami or salt beef. Add a spoonful of sauerkraut and a few gherkins

    2)  Mix together the ingredients for the dressing then spread the unbuttered side of the two remaining slices with dressing. Place on top of the sandwiches so that the buttered sides are outermost

    3)  Heat a large non stick frying pan, griddle pan or sandwich press and add the sandwiches. Cook over a medium heat for two to three minutes until the cheese is starting to melt and the bread is starting to toast and brown

    4)  Carefully turn the sandwiches and cook for another couple of minutes on the other side

    5)  Transfer to a board, cut each sandwich in half and serve
