    You will need

    • 4 x Slices Warburtons Half and Half loaf ​
    • 60g baby washed spinach leaves ​
    • 1 x red pepper ​
    • 200g pouch mozzarella cheese – drained ​
    • 1 x large vine tomato ​
    • ½ x small red onion ​
    • 25ml olive oil ​
    • Balsamic glaze to drizzle ​
    • Butter to spread

    • Slice the pepper– discard any seeds and whit pith ​
    • Heat the oil in a frying pan and saute the peppers for 5 mins on a medium light – turning as you cook – to soften them ​
    • The add the spinach leaves and stir through to wilt them ​
    • Slice the mozzarella cheese ​
    • Divide this between two of the slices of bread ​
    • Thinly slice the tomato and put on top of the cheese slices ​
    • Thinly slice the red onion and divide this between the other two slices ​
    • Divide the pepper and wilted spinach and put on top of the red onion slices ​
    • Now put the tomato and cheese slice bread on top of the chicken to make two sandwiches ​
    • Butter both sides of the bread ​
    • Fry in a large frying pan for 4/5 mins each side – till golden ​
    • Serve drizzled with some balsamic vinegar glaze ​
