You will need
- 4 x Slices Warburtons Half and Half loaf
- 60g baby washed spinach leaves
- 1 x red pepper
- 200g pouch mozzarella cheese – drained
- 1 x large vine tomato
- ½ x small red onion
- 25ml olive oil
- Balsamic glaze to drizzle
- Butter to spread
Make it

- Slice the pepper– discard any seeds and whit pith
- Heat the oil in a frying pan and saute the peppers for 5 mins on a medium light – turning as you cook – to soften them
- The add the spinach leaves and stir through to wilt them
- Slice the mozzarella cheese
- Divide this between two of the slices of bread
- Thinly slice the tomato and put on top of the cheese slices
- Thinly slice the red onion and divide this between the other two slices
- Divide the pepper and wilted spinach and put on top of the red onion slices
- Now put the tomato and cheese slice bread on top of the chicken to make two sandwiches
- Butter both sides of the bread
- Fry in a large frying pan for 4/5 mins each side – till golden
- Serve drizzled with some balsamic vinegar glaze
