You will need
- 1 Warburtons Protein Muffin
- 10g butter
- 1 cheese slices
- 4 lettuce leaves
- 1/2 red onion-finely sliced
- 3 cod fish fingers
- 1/4 tsp wasabi
- 10 ml lime juice
- 25g mayonnaise/crème fraiche
- 5ml soy sauce
- 5g chives-chopped finely
- 1 wedge lime

- Add the sliced onion to a bowl and tip in 5ml lime juice allow these steep.
- Take the mayonnaise/crème fraiche and add 5ml lime juice, the soy sauce, half the chives and wasabi mix well
- Cook the fish fingers under a medium grill for 12 minutes turning once halfway through cooking. Cut the muffin in half lengthways Toast it on both sides and spread with butter
- Place the lettuce on the muffin followed by a cheese slice, dollop on the mayonnaise/creme fraiche, then the fish fingers and the red onion, sprinkle on the chives cut in two stack and serve with a wedge of lime.
