You will need
- 2 slices Warburtons OurDough
- 2 slices Roast Ham
- 50g Comte Cheese-Grated
- 50g Gruyère Cheese-Grated
- 175g Béchamel sauce -store bought or homemade
- 25g butter
- 1/2 ripe Avocado
- 1 Egg
- 30G Micro Herbs
- 10g thyme
- 80ml vegetable oil-for frying
To serve:
- Cracked black pepper
- A pinch of chilli flakes
- Wholegrain mustard-optional

- Butter the bread on both sides and grill until golden.
- Top each piece with béchamel, sprinkle with cheese & grill until the cheese starts to bubble - placing the ham on one of the slices when its nearly done so it crisps a little on the edges.
- Slice the avocado.
- Fry an egg in a little oil
- To assemble the sandwich place the toast with the cheese & ham on a plate, top with some avocado and half the micro herbs & thyme, add the second slice of cheesy bread, top with the egg and herbs, sprinkle with chilli flakes, black pepper and serve with a small pot of Wholegrain mustard
