You will need
Lemon & Herb Chickpea Whip
- 2 slices Warburtons Fibre Fix loaf
- 100g canned chickpeas, drained and rinsed
- 1 tbsp olive oil
- Juice of ½ lemon
- 1 small garlic clove (optional)
- Handful fresh herbs (e.g. parsley or coriander)
- Grated carrot
- A handful of spinach, rocket or mixed leaves
- Salt and black pepper
- Optional: chilli flakes
Make it
| Serves 1
- Add the chickpeas, olive oil, lemon juice, garlic and herbs to a blender or food processor.
- Blend until smooth and creamy, scraping down the sides as needed.
- Season with salt and black pepper to taste.
- Spread the chickpea whip generously over one slice of bread.
- Top with grated carrot and leafy greens, then close with the second slice.
