    You will need

    Lemon & Herb Chickpea Whip 

    • 2 slices Warburtons Fibre Fix loaf 
    • 100g canned chickpeas, drained and rinsed 
    • 1 tbsp olive oil 
    • Juice of ½ lemon 
    • 1 small garlic clove (optional) 
    • Handful fresh herbs (e.g. parsley or coriander) 
    • Grated carrot 
    •  A handful of spinach, rocket or mixed leaves 
    • Salt and black pepper 
    • Optional: chilli flakes 

    Make it

    | Serves 1

    1. Add the chickpeas, olive oil, lemon juice, garlic and herbs to a blender or food processor. 
    2. Blend until smooth and creamy, scraping down the sides as needed. 
    3. Season with salt and black pepper to taste. 
    4. Spread the chickpea whip generously over one slice of bread. 
    5. Top with grated carrot and leafy greens, then close with the second slice.
