You will need
• 4 Warburtons Pearl Sugar Waffles
• 2 boneless chicken thighs
• 1 egg
• ¼ tsp onion salt
• ¼ tsp garlic granules
• ¼ tsp paprika
• 40g crushed cornflakes
• 1 heaped tbsp cornflour
• 200ml vegetable oil
• A pinch of salt to season
• 5g coriander
• Zest of ½ a lime
For the smoked maple chilli sauce:
• 1 tbsp maple syrup
• ½ tsp chipotle chilli flakes
• ¼ tsp smoked paprika

🌶️ Mix your chilli flakes, smoked paprika, and maple syrup in a small jug
🥚 Whisk up your egg, garlic powder, onion salt, and paprika in a medium sized bowl and season with a bit of salt
🍗 Pat your chicken thighs dry with a bit of kitchen roll, then coat ‘em in the egg mixture
🥣 Pop your crushed cornflakes into a bowl and stir in the cornflour, then roll your chicken in the mixture til properly coated
🔥 Heat your oil in a deep sided frying pan on medium high, then fry the chicken on each side until brown and crispy on the outside and properly cooked on the inside (this should take about 8-9 minutes). Remove from the oil and pop on some kitchen roll to absorb any extra oil, then slice into nice chunky strips
🧇 Heat your waffles for a minute on each side under the grill, then stack two on a plate with some chicken strips and a nice drizzle of the maple chilli sauce. Garnish with coriander and lime zest and enjoy!
