    You will need

    4 slices Warburtons Wholemeal Bread

    1 avocado, halved, de-stoned and peeled

    ½ fresh lime, juice

    1 large ripe tomato, finely diced

    2tbs tinned sweetcorn (or fresh cooked)

    1 spring onion, sliced

    1 red chilli, sliced

    few sprigs fresh coriander

    1x 150g pack cooked peeled king prawns

    handful lettuce leaves

    1. Prepare the avocado then slice one half and sprinkle with a little lime juice and set aside. Chop the other half and place in a small bowl. Add the remaining lime juice, tomato, sweetcorn, spring onion, chilli and coriander. Stir and set aside
    2. Arrange the prawns and lettuce on two slices of the bread then top with the other two slices and serve with the salsa on the side
