You will need
4 slices Warburtons Wholemeal Bread
1 avocado, halved, de-stoned and peeled
½ fresh lime, juice
1 large ripe tomato, finely diced
2tbs tinned sweetcorn (or fresh cooked)
1 spring onion, sliced
1 red chilli, sliced
few sprigs fresh coriander
1x 150g pack cooked peeled king prawns
handful lettuce leaves
Make it
10 minutes | Serves 2
- Prepare the avocado then slice one half and sprinkle with a little lime juice and set aside. Chop the other half and place in a small bowl. Add the remaining lime juice, tomato, sweetcorn, spring onion, chilli and coriander. Stir and set aside
- Arrange the prawns and lettuce on two slices of the bread then top with the other two slices and serve with the salsa on the side
