    You will need

    Ingredients:

    • 2 slices of protein loaf
    • 100g tuna -drained
    • 15g/1tbsp crème fraiche
    • 30g matured cheddar cheese
    • 10g chopped parsley
    • 30g Rocket
    • 1/2 small Red onion-diced
    • 1/2 red Pepper-diced
    • Salt and pepper to season (optional)

    Make it

    Drain the tuna and spoon into a medium size bowl. Add the crème fraiche, cheese, pepper, onion and herbs, season and mix well.

    Spread the filling on one slice of bread using a knife, top with the other slice of bread and toast in medium hot pan with a little oil for 4 minutes on each side until you have a gooey melted filling and golden brown toast. Serve with rocket
