You will need
Ingredients:
- 2 slices of protein loaf
- 100g tuna -drained
- 15g/1tbsp crème fraiche
- 30g matured cheddar cheese
- 10g chopped parsley
- 30g Rocket
- 1/2 small Red onion-diced
- 1/2 red Pepper-diced
- Salt and pepper to season (optional)
Make it

Drain the tuna and spoon into a medium size bowl. Add the crème fraiche, cheese, pepper, onion and herbs, season and mix well.
Spread the filling on one slice of bread using a knife, top with the other slice of bread and toast in medium hot pan with a little oil for 4 minutes on each side until you have a gooey melted filling and golden brown toast. Serve with rocket
