    • 15ml Lemon juice
    • 100g Cherry Tomatoes- red & yellow if available
    • 30g Rocket
    • 50g feta cheese
    • 1/2 green pepper diced
    • 1tsp olive oil
    • 1tsp balsamic glaze
    • Black pepper -to season

    Take the Cannellini beans and the Avocado place them into a bowl and squeeze over the lemon juice, mash this with a fork.

    Toast the bread and spread with the avocado mixture, add the rocket, tomatoes, feta, pepper, drizzle with oil and balsamic glaze. Sprinkle with black pepper and serve.
