- 1/2 Avocado
- 100g Cannellini beans-drained
- 15ml Lemon juice
- 100g Cherry Tomatoes- red & yellow if available
- 30g Rocket
- 50g feta cheese
- 1/2 green pepper diced
- 1tsp olive oil
- 1tsp balsamic glaze
- Black pepper -to season
Make it

Take the Cannellini beans and the Avocado place them into a bowl and squeeze over the lemon juice, mash this with a fork.
Toast the bread and spread with the avocado mixture, add the rocket, tomatoes, feta, pepper, drizzle with oil and balsamic glaze. Sprinkle with black pepper and serve.
