You will need
- 1 Warburtons 800g Toastie Loaf
- 425ml cloudy apple juice
- 50g ground almonds
- Juice and zest of 1 large orange
- 250g sweet mincemeat
- 50g whole cranberry sauce
- 30g halved glace cherries
- 100g unsalted butter
- 50g light brown sugar
- 1 large egg
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 10g mixed spice
- Icing sugar to serve
Make it
1 hour 30 mins - 2 hours | Serves 12
🍞 Tear your bread into little bits and put them in a big mixing bowl with the ground almonds and half the apple juice
🍊 Grate the peel of your orange and add half into the bowl, then juice your naked orange and add it to the mix
🥚 Beat your egg and pour that in with your mincemeat (the fruity kind, obvs) and cranberry sauce then give it all a good mix
🧈 Melt your butter and sugar together in a pan, then add mixed spice, cinnamon, and ginger, stir it all together and mix that through your bread mixture
🫳 Spoon the mix into a lined cake tin – we went round, and squish it all down until it’s nice and flat on top
🍒 Top with your glace cherries, pushing them gently into the dough
⏲️ Bake for an hour then, if the top is getting too brown, loosely cover with some tin foil and bake for another 30 minutes
❄️ Let it cool for 5 minutes, take it out the tin, then sprinkle with your leftover orange zest and a bit of icing sugar
😍 Serve warm with a decent glug of brandy cream
