    • 200g dry cure streaky bacon
    • Maple syrup
    • 2 Crumpets
    • Whipped vanilla butter
    • 200g softened butter
    • 2 tbsp milk
    • 1 tsp vanilla extract

    • Grill the bacon until crispy, toast the crumpets
    • To serve, simply top the crumpets with plenty of bacon, drizzle with maple syrup and top with vanilla butter
    • Scrape the sides of the bowl, add the vanilla extract and beat on high for 2-3 additional minutes, until the butter is light and creamy
    • Transfer to an airtight container and store in the refrigerator for up to a week. Return to room temperature before serving.
