You will need
For the Sandwiches (we went for):
- 2 Original Toastie Loaf / 4 Wholemeal Loaf
- 220g egg mayo- homemade/store bought
- 1 chicken breast cooked
- 1 tomato- finely sliced
- 1/2 baby gem lettuce- shredded
- 90g grated cheese
- 10g chives
- 1tbsp mayo
Bite size bruschetta
- 2 slices Our Dough
- 2xTomatoes
- 1 red onion diced
- 50g mozzarella grated
- 1tbsp olive oil
- 5g basil leaves roughly torn
Dessert
- 2 crumpets cut into bite size chunks
- Whipped double cream or clotted cream
- 3tbsp strawberry jam
Crumpet centre piece
- 24 lightly toasted crumpets
- 1 Tbsp icing sugar
- 100g raspberries
- 120g strawberries
- 100g blueberries
- 10g mint sprigs -optional
- Candles/sparklers - to serve
Garnishes
- 100g cubed cheese
- Half a small cucumber- sliced into batons
- 1 carrot -sliced into batons
- 100g mixed grapes

| Serves
- First toast the crumpets, layering around a polystyrene cone and pinning them into place with cocktail sticks to create a layered centrepiece. Add berries using skewers and mint (optional), and sprinkle over the icing sugar. Add the sparklers to the cake ready for lighting.
- Assemble your sandwiches (we went with egg mayo; fresh chicken, lettuce and tomato; and cheese and chive.) Slice into fingers and arrange around the crumpet tower
- Take the bruschetta ingredients and mix, seasoning well. Toast ’Our Dough slices into bite size fingers, top with the bruschetta mix -arrange these around the cake
- For the dessert crumpets: toast the crumpets, cut into quarters and top with cream then jam. Arrange these around the cake, add the garnishes in and amongst everything else
- Light the sparklers and get the party started!
