Apple and Blackberries with Cinnamon Toasts

Preparation and cooking time: up to 30 mins
Serves: 4

Ingredients:

  • 5 slices of Warburtons Raisin Loaf with Cinnamon with the crusts removed 
  • 500g / 17 ½oz brambly apples, peeled, cored and sliced
  • 125g / 4 ½oz granulated sugar
  • 2x125g / 2x4 ½oz punnets of blackberries
  • 25g / 1oz butter
  • 15g / ½oz caster sugar
  • 1tsp / 6ml ground cinnamon
  • 8 scoops of vanilla ice cream

Place the apples in a saucepan with 6x15ml (tbsps) spoons of water and 75g / 2 ½oz granulated sugar. Bring to the boil and simmer gently for 10mins.

Meanwhile, place the blackberries in a pan with the remaining sugar. Bring to the boil and simmer for 1 min.

Butter both sides of the Warburtons Raisin Loaf with Cinnamon, sprinkle with sugar and grill until caramelised. Cut each slice in to 2 triangles.

Place 2 scoops of ice cream on a plate and top with a portion of the apple and blackberries. Serve with the cinnamon toast.

Christmas Stars

Serves 2 people
Preparation time: 15 minutes

Ingredients:

  • 6 Potato Cakes
  • 6 slices of turkey
  • 1 small jar of cranberry sauce

Great as a festive starter or a Boxing Day lunch - take Warburtons potato cakes and, using a star-cutter, create the shapes. Then pop them in the toaster and top with a slice of turkey and a generous teaspoon of Cranberry sauce. By the way, don’t throw away the left over bits of potato cake - use them with other Christmas day leftovers as the basis for a fry-up.

Ingredients:

Simply gently grill your teacakes on both sides, place on breadboard and spread a good helping of your best strawberry jam on one side. Top off with a generous spoonful of clotted cream for the perfect cream tea!

Simple Caramel & Banana Pancakes

Serves 2 people
Preparation time: 10 minutes

Ingredients:

  • 4 Warburtons Pancakes
  • 50g / 1 ¾oz Soft brown sugar
  • Large ripe bananas, peeled and cut into 5cm pieces
  • Double cream

Heat the butter in a heavy based frying pan, then add the sugar and cook, stirring periodically until it dissolves and bubbles. Gently toast the pancakes, then divide between your serving plates. Chop the bananas and sprinkle over the pancakes. Pour the caramel over the bananas and serve immediately.

Serves 2 people
Preparation time: 5 minutes

Ingredients:

Gently toast your potato cakes, place on the plate and simply spread with butter. Alternatively, serve with bacon & eggs, beans & melted cheese, fish fingers & ketchup or anything you like. A healthier and different change from chips!

Welsh Rarebit

Ingredients:

  • 2 slices Premium White
  • 25g / 1oz butter
  • 200g / 7 ¼oz Cheddar cheese- grated
  • 1 tsp / 6ml mustard
  • 1 tbsp / 18ml beer (optional)
  • Seasoning

Melt the butter in a heavy saucepan, stir in cheese until melted, season to taste. Lastly stir in the beer. Toast one side of the bread and pour mixture over the untoasted side, return to grill for 3-4 minutes, serve immediately.

Vanilla Eggy-bread Skewers with Citrus Yoghurt

Ingredients:

  • 2-3 thick slices of Warburtons White Batch Bread
  • 3 eggs
  • 150ml/5fl oz single cream
  • 150g/5oz caster sugar
  • Seeds from 3 vanilla pods
  • 250g/9oz greek yoghurt
  • Zest and juice of one orange

Whisk together the eggs, cream, caster sugar and vanilla. Cut the bread into 8 big chunks. Dip in the egg mixture and then thread onto 2 wooden skewers.
Gently dry fry in a large non-stick frying pan until golden brown on all sides.

Meanwhile, mix together the yoghurt, sugar and orange. Then dip the hot skewers into your yoghurt and enjoy.

Vegetarian Kebabs

Ingredients:

  • 1 red pepper, seeded and chopped into 2cm dice
  • 1 aubergine chopped into 2cm dice
  • 12 cherry tomatoes
  • Olive oil
  • Salt and pepper
  • 4 wooden skewers
  • 1 pack of Warburtons Seeded Rolls

Sprinkle the aubergine with salt and leave for 30 minutes, then rinse. Meanwhile soak the wooden skewers in water to stop them burning. Thread each skewer with a piece of pepper, aubergine, a tomato and a mushroom and repeat. Drizzle with olive oil and season with salt and pepper.

Then barbecue, turning frequently until cooked. Serve in Warburtons Seeded Rolls.

Lightly Curried Chilled Prawns served on a Potato Cake

Ingredients: (Serves 4)

  • 2 Warburtons Potato Cakes
  • 3 cups of fresh cooked and peeled prawns
  • 1/2 cup of finely chopped apricots, dates and raisins
  • 4 tsp / 25ml of madras curry paste
  • 8 tbsp / 148ml of mayonnaise
  • Dash of double cream
  • Pinch of ground coriander

Garnish

  • Drizzle of virgin olive oil
  • Splash of balsamic vinegar
  • Diced tomatoes and chopped chives
  • Fresh coriander leaves

Place the prawns, apricots, dates and raisins in a large mixing bowl. Add the madras curry paste, mayonnaise, double cream and ground coriander and mix well.
Slice the 2 Warburtons Potato Cakes in half and toast the insides.
Place one half of the toasted potato cake on a plate and spoon the prawn mix on top. Drizzle the virgin olive oil and balsamic vinegar around the plate and sprinkle the diced tomatoes and chopped chives. Garnish the prawns with fresh coriander leaves.

Ingredients:

Cook the turnips and mash thoroughly, add butter if required.
Prepare Haggis according to instructions.
Grill the potato cakes, split to make a pocket and fill with Haggis, serve 'neeps alongside.

Halloween Trick or Treat

Ingredients:

Peel banana and cut into chunky slices. Put margarine, cinnamon and sugar into a bowl and mix well until combined. Toast Orange Loaf slices on both sides, place on a board and spread each slice with the mixture of margarine, sugar and cinnamon.
Cut each of the slices into quarters.
Alternate banana and bread pieces onto cocktail sticks or kebab skewers. Place on a plate and serve with sliced apples.

Winter Warmer

Ingredients:

  • 1 pack of Warburtons Crumpets
  • Medium Cheddar cheese
  • Worcestershire sauce (optional)

Gently toast the base of a crumpet, then top it with a slice of the cheese. Return to the grill until the cheese melts and starts bubbling. A splash of Worcestershire sauce will get your taste buds tingling. Great served with a mug of hot soup.

Cheese and Tomato Crumpets

Ingredients:

  • Warburtons Crumpets
  • Mature Cheddar cheese - grated
  • Tomato slices

Gently toast the crumpet base under a grill. Top with cheese and tomato slices and return to grill until cheese melts and bubbles. Serve immediately.
