Chicken Caesar Sandwich

Ingredients:

  • Warburtons Bursting with 10 Grains & Seeds
  • Chicken breast fillet
  • Little gem lettuce leaves
  • Parmesan shavings
  • Black pepper
  • Caesar dressing

Method:

  1. Griddle chicken breast on both sides until well cooked. Set aside.
  2. Lightly toast a slice of bread and top with lettuce, sliced chicken, and a drizzle of caesar dressing
  3. Finish with a few shavings of parmesan and season to taste

Poached Salmon with Watercress Sandwich

Ingredients:

  • Warburtons Healthy Inside Oats
  • Poached salmon flakes
  • Fresh lemon juice
  • Watercress
  • Low fat mayonnaise

Method:

  1. Take 2 slices of bread and cover one slice with a generous amount of watercress.
  2. Top with the poached salmon flakes and squeeze over some fresh lemon juice, top with remaining slice.

Warburtons Ultimate Picnic Sandwich

Ingredients:

  • 2 slices of thick Warburtons Wholemeal Fibre Boost
  • 1 tablespoon low fat cream cheese
  • ½ teaspoon chopped chives
  • ½ an avocado, peeled and stoned, roughly mashed with a fork
  • Squeezed lemon juice
  • 30g tomatoes (2 cherry tomatoes) roughly chopped
  • 50g roasted yellow & red peppers (1/3 medium peppers) sliced
  • 40g (1-2 slices) smoked salmon
  • Chilli flakes
  • Cracked black pepper to season

Method:

  1. Mix low fat cream cheese with chopped chives and spread on a slice of Warburtons Wholemeal Fibre Boost, right up to the edges.
  2. Add slices of smoked salmon, which is full of Omega-3 and great for helping to keep the heart and circulation healthy.
  3. Mash 1/2 avocado with a squeeze of lemon juice, black pepper, chopped tomatoes and peppers, chilli flakes.
  4. Place on top of salmon (if using two pieces of salmon place one underneath and one on top of avocado filling).
  5. Top with a slice of Warburtons Wholemeal Fibre Boost, spread with low fat cream cheese with chopped chives. The chives mixed with the low fat cream cheese not only make a delicious alternative to butter or spread but can also help to ward off insects!
  6. Serve with a sprig of fresh mint and a glass of pink grapefruit juice. Mint is a great finishing touch to repel mosquitoes and pink grapefruit juice is the perfect, refreshing summer drink full of super nutrients

Wholegrain Goodness with chargrilled chicken, green pesto and sundried tomatoes

Ingredients:

  • Warburtons Wholegrain Goodness
  • Heaped teaspoon of green pesto
  • Freshly ground black pepper
  • Small chicken breast cut into strips
  • Handful of watercress
  • 4 or 5 sundried tomatoes

Method:

  1. Chargrill the chicken strips in a hot griddle pan and leave to cool.
  2. Spread the pesto on to the slices of Wholegrain Goodness and layer the chicken pieces with the sundried tomatoes and watercress.
  3. Season with pepper and enjoy!

A Tom’s Lancashire Rarebit with Scarisbrick Red Velvet Beetroot

Ingredients:

  • 25g / 1oz butter
  • 25g / 1 oz flour
  • 125ml milk
  • 1 tbsp English mustard
  • 1 tsp Worcestershire sauce
  • 2 large free range eggs separated
  • 100g / 4 oz Creamy Lancashire cheese
  • 4 slices Warburtons Toastie loaf
  • Lo-Salt
  • Freshly milled black pepper
  • 360g / 13 oz cooked whole baby beetroot, thinly sliced
  • 8 pieces of crispy grilled naturally cured bacon, rind removed

Method:

  1. Melt the butter in a small saucepan, blend in the flour and cook for 2 minutes, slowly add the milk and blend thoroughly for 2 minutes
  2. Take the pan off the heat and blend in the mustard and Worcestershire sauce. Now blend in the egg yolks and place to one side to cool. Blend in the cheese and toast the bread on one side
  3. Whisk the egg whites until stiff and using a metal spoon; carefully fold the egg whites into the cheese mixture
  4. Cover each slice of toast on the untoasted side with slices of Red Velvet Beetroot and then top with the Lancashire cheese mixture. Grill until golden brown

Ingredients:

Take 1 Warburtons Wholemeal Roll and cover the base with Iceberg lettuce. Add some red onion slices and finish with chunks of cheese.

Roast Beef, Avocado and Horseradish Relish

Ingredients:

  • Warburtons Healthy Inside
  • Roast beef slices
  • Sliced avocado
  • Sliced tomatoes
  • Rocket leaves
  • Horseradish relish:
    • 45ml / 3 tbsp fromage frais
    • 20ml / 4 tsp grainy mustard 
    • 20ml / 4 tsp horseradish sauce
    mix thoroughly together

Take 2 slices Warburtons Healthy Inside and spread a generous layer of horseradish relish on the first slice.

Layer slices of roast beef, rocket leaves, avocado and tomato. Top with remaining slice of bread.

Tuna Nicoise

Ingredients:

  • Warburtons Healthy Inside
  • Tuna in Sunflower oil
  • A sliced hard boiled egg
  • Spinach leaves
  • Sliced black olives
  • Sliced tomatoes

Cover a slice of Warburtons Healthy Inside with spinach leaves. Pile on olives, tomatoes, egg and tuna, top with remaining slice of bread. Serve immediately.

Feta Cheese Salad Roll

Ingredients:

Take a Warburtons Seeded Sandwich Roll and slice it in half. 

Chop some cucumber, tomato, red onion, olives and fresh mint up, and dice some feta cheese. Toss all of the ingredients in a drizzle of olive oil, and serve on the roll.

Tip: This sandwich looks fantastic with all its bright colours, so why hide them? Try serving it open with the ‘lid’ at the side of the plate.

Mozzarella, Tomato and Basil Toasted Sandwich

Ingredients:

  • 2 slices of any style Weight Watchers Danish bread
  • Low-fat cooking spray 
  • ½ tablespoon sun dried tomato purée 
  • 15g (½oz) Mozzarella light, thinly sliced
  • 1 tomato, sliced 
  • Fresh basil leaves
  • Salt and pepper 

Spray the inside of your sandwich toaster with the spray oil and preheat it according to the manufacturer’s instructions. 

Spread the bread with the sun dried tomato purée. Put the Mozzarella, basil leaves and tomato slices onto one slice, season and top with the other slice. 

Toast the sandwich for 4 minutes and serve with a side salad. 

(You can also use a grill - toast the bread on one side then spread with tomato purée. Put all the filling on one slice with the cheese on top. Grill until the cheese is melted then top with the second slice.)

Serves 2 people
Preparation time: 20 minutes

Ingredients:

Cook the turnips and mash thoroughly, add butter if required. Prepare Haggis according to instructions. Gently toast the potato cakes, split to make a pocket and fill with Haggis, serve 'neeps alongside.

Lightly Curried Chilled Prawns served on a Potato Cake

Serves 4 people
Preparation time: 15 minutes

Ingredients:

  • 2 Warburtons Potato Cakes
  • 3 Cups of fresh cooked and peeled prawns
  • 1/2 Cup of finely chopped apricots, dates and raisins
  • 4 tsp / 25ml of Madras curry paste
  • 8 tbsp / 49ml of mayonnaise
  • Dash of double cream
  • Pinch of ground coriander
  • Garnish
  • Drizzle of virgin olive oil
  • Splash of Balsamic vinegar
  • Diced tomatoes and chopped chives
  • Fresh coriander leaves

Place the prawns, apricots, dates and raisins in a large mixing bowl. Add the Madras curry paste, mayonnaise, double cream and ground coriander and mix well. Slice the 2 Warburtons Potato Cakes in half and toast the insides. Place one half of the toasted potato cake on a plate and spoon the prawn mix on top. Drizzle the virgin olive oil and Balsamic vinegar around the plate and sprinkle the diced tomatoes and chopped chives. Garnish the prawns with fresh coriander leaves. Great for impressing your friends!

Summer Sizzler

Ingredients:

  • Warburtons White Rolls
  • Cheese spread
  • 500g lean beef, finely minced
  • 1 onion, finely chopped
  • 1 tbsp / 18ml Worcestershire sauce
  • Cherry tomatoes, iceberg lettuce and red onion to garnish

Place minced beef, onion and seasoning in a bowl and mix well. Shape mixture into 6 burgers. Cook burgers for 7 mins on both sides (or until cooked).

Lightly toast and butter the White Rolls. Place a burger in a roll and garnish with shredded lettuce, tomatoes and onion slices. Finally add a generous amount of cheese spread.

Toasted Panini Sandwich 

Ingredients:

Split roll in half and spread a layer of thin tomato puree on base. Top with a thin slice of ham and then grated cheese. Cover with remaining half roll.

Place under a ‘George Foreman’ grill for 5 mins and serve immediately with a mixed salad. Warburtons official National Bread Week 2003 Sandwich!

Chargrilled Vegetables and Mozzarella Sandwich

Ingredients:

  • Warburtons Soft Sandwich Rolls
  • Red and yellow peppers, seeded and sliced into chunks
  • Cherry tomatoes – cut in half
  • Courgette - sliced
  • Red onions sliced into chunks
  • Chunks of mozzarella cheese

Take a selection of fresh vegetables – red and yellow peppers, cherry tomatoes, courgettes and red onions – cook for a few minutes on a griddle. Leave to cool. Fill a roll with the vegetables and chunks of mozzarella cheese. A satisfying vegetarian option!

Classic BLT

Ingredients:

  • 2 slices of Warburtons Premium White Bread
  • Reduced calorie mayonnaise
  • 2 slices of grilled lean bacon
  • A few cherry tomatoes
  • Lettuce

Spread the bread with a fine layer of the reduced calorie mayonnaise. Fill with the grilled bacon, ripe cherry tomato slices and crispy lettuce.

Scottish Roast Beef on Crusty Bread

Ingredients:

For the Filling:

  • Slices of Crusty Loaf
  • Slices of Scottish roast beef
  • Few leaves of curly endive
  • Thinly sliced tomato
  • Thinly sliced avocado

For the Horseradish relish:

  • 45ml / 3 tbsp fromage frais
  • 20ml / 4 tsp grainy mustard
  • 20ml / 4 tsp horseradish sauce

For the Horseradish relish mix all ingredients together in a bowl. Take one slice of Crusty loaf and spread with 1 tsp / 6ml horseradish relish, top with filling ingredients and place the second slice of bread on the top for a traditional Scottish sandwich. Delicious!

North East Craster Kippers

Ingredients:

  • 2 Slices of Stoneground Batch
  • Softened cream cheese
  • 2 tbsp / 37ml mayonnaise
  • 1 tbsp / 18ml paprika
  • 2 hard-boiled free-range eggs
  • Pair of cooked Craster Kippers

Mix together cream cheese, mayonnaise and paprika. Spread thickly on a slice of Stoneground Batch. Add slices of egg and chunks of kipper, top with remaining slice.

Char Grilled Vegetables on Seeded Roll

Ingredients:

  • Seeded Sandwich Rolls
  • Red onion
  • Red/green/yellow peppers
  • Aubergines
  • Courgettes
  • Mayonnaise and Lollo Rosso lettuce (optional)

Roughly slice the vegetables and char grill on a griddle until cooked. Drain and leave to cool.

Split a Seeded Roll, spread a thin layer of mayonnaise on a base, add some lollo rosso lettuce, and then pile on the vegetables.

Coronation Chicken Sandwich

Ingredients:

  • Slices of Soft Farmhouse
  • Cooked chicken breast - shredded
  • 2 tbsp / 37ml mayonnaise
  • Chopped tinned apricot
  • 1 tbsp /18ml curry powder
  • Finely chopped spring onions
  • Lettuce leaves

Mix the curry powder and mayonnaise together, add spring onions, apricots and chicken and mix thoroughly.

Place a layer of lettuce on a slice of Farmhouse bread and top generously with the filling.

Spicy Chicken Sandwich

Ingredients:

  • Warburtons White Rolls
  • 4 chicken fillets
  • 1 tsp / 6ml flaked chilli
  • Juice of one lemon
  • 1 yellow pepper, seeded and sliced
  • 6 cherry tomatoes
  • 4 slices mozzarella cheese
  • Olive oil

Slice the chicken into strips about 2cm wide and place in a bowl with lemon juice, olive oil and chilli flakes.
Marinate for at least one hour before barbecuing.
While the chicken is cooking, grill the pepper and tomatoes until soft.

When everything is ready, place in four Warburton White Rolls and top the chicken with a slice of mozzarella. Let it melt before eating
